Pangasius hypophthalmus is a freshwater catfish also known as Vietnamese Tra or White River Cobbler. They natively live in a tropical climate and are farmed successfully in a very natural environment along the Mekong Delta in Vietnam. The fish are fed with industrial pellets made from rice bran, and some soybean meal which floats on top of the water and stops them from being bottom feeders, ensuring better quality fish. |

Pangasius hypophthalmus needs only six months to reach its weight of 3 to 4.5 pounds. The harvesting season all year around, with the average sizes being 11.5 to 23.5 inches and weighing from one to 6.5 pounds. The product most sold from pangasius is the fillet, skin-off and fully trimmed and price is based on the color and amount of glazing used. The white fillet, the highest grade and most expensive, is in high demand in the United States, and Europe; light pink and light yellow is popular in Europe and Eastern Europe; yellow is the lowest grade and is widely used in Asia. |
