Black Tiger Shrimp, also known as the giant tiger prawn, is easily recognizable by its distinctive black and gray striped shell when raw. They are the largest and most widely distributed of the 300 shrimp species in the world. |
|
Most Black Tigers come from shrimp farmed in ponds as well as marine fisheries in Asia, and are one of its major aquaculture products. Wild shrimp are harvested by trawlers working in very shallow, muddy water to depths beyond 300 feet, the main sources coming from India, Indonesia, Thailand, and Vietnam. The shrimp can grow as long as 13 inches, but harvested size averages 9 to 11 inches. When raw, the shrimp are a bluish-gray color, with hints of yellow striping; when cooked they shrink, the shells turn bright red and the flesh is white with deep red skin tones. The meat is soft and juicy with an exceptionally mild flavor, although they absorb seasoning well without losing their own sweetness. They are perfect for a healthy diet due to their low fat, high protein content. |

| Weights : In the international trade 4 major terms or specifications are used for weights and counts. |

1. Gross weight - Gross count :
Many processors and packer prefer this kind of specifications. The higher the glaze percentage the larger the shrimp count per lb. |
|
2. Gross weight - Net count :
This means that the glaze water is not compensated and the a 2 kg's pack will weigh about 2 kg's + tar in frozen condition. The count is counted in deglazed condition or before glazing. |
|
3. Net weight - Net count :
This means : The packer must make sure that his infill weights of glazed product are fully compensated for the glaze water. Further, he must count the size of shrimp in deglazed condition (this means that he will draw sample from his production line and count the frozen shrimp before glazing): This product is ideal for repacking and easy to relate to for the re-packer or food processors. Many packers do this and it works well. |

4. Net weight - Gross count :
This means the same as above, but now the packer will be counting the size after glazing. This means including glaze. |
